BASIC OVEN BAKED CHICKEN AND RICE

One pan dishes are a yes from me and make things so much easier. This dish is certainly one for the books.

INGREDIENTS

  • Chicken thighs

  • White rice

  • Carrots

  • Onions

  • Garlic

  • Thyme

  • Black pepper

  • Chicken broth

  • Lemon

  • Salt

  • Butter


COOKING AND PREPARATION

  1. Season your chicken with thyme, black pepper and salt. Squeeze a lemon over your chicken.

  2. Melt butter in a pan and fry your chicken. Fry for 5 minutes on each side. Make sure your pan is non-stick.

  3. Remove your chicken and set aside.

  4. Preheat your oven to 230•C

  5. In a baking pan or casserole pan, add rice, carrots, onions and garlic. Pour your chicken broth over the rice. Make sure your broth doesn’t drown the rice.

  6. Place your semi cooked chicken on top of the rice, garnish with parsley and butter, and pop into the oven.
