BEEF SHORT RIBS

We all need to experience fine dining at least once in our lives. This is the kind of food you'll pay big money for at all these fancy restaurants. I’m bringing you a very easy recipe to make at home but will still give you that fine dining experience. Wine gives complexity and depth of flavour so I assure you this recipe is GOOD!


Ingredients

  • Beef short ribs

  • Nederburg Pinotage Wine

  • Carrots

  • Olive oil

  • Onions

  • Garlic

  • Bay leaves

  • Dried oregano

  • Dried parsley

  • Beef or BBQ spice

  • Tomatoes

  • Tomato paste

  • Tomato sauce

  • Sugar

  • Fresh thyme

  • Black pepper


Substitutes

  • You can substitute the alcoholic wine with the following:

    • Non alcoholic wine

    • Red wine vinegar

    • Beef/chicken stock

    • Red Grape or Pomegranate juice


Measurements

  • 4-6 beef short ribs

  • 1.5 tsp each salt and pepper

  • 2 tbsp olive oil

  • 3 garlic cloves chopped

  • 1 large onion chopped

  • 2 carrots

  • 2 tbsp tomato paste

  • 2 cups (500ml) Nederburg Pinotage

  • 2 cups Water

  • 2 sprigs thyme

  • 2 bay leaves

  • 2 large tomatoes, crushed

  • 1 Tbsp sugar

These measurements are just a guide and can be adjusted accordingly.

Instructions

  1. Wash your beef short ribs and pat dry with a paper towel. Remove any excess fat.

  2. Season your ribs with black pepper, salt, oregano, parsley and BBQ spice. Be generous with your seasoning!

  3. In a non stick pot, preferably cast iron or ceramic, add oil and heat up on high heat.

  4. Once your oil is hot add your seasoned short ribs and brown on each side for about 10 minutes.

  5. When you’re happy with the color of your ribs transfer then to a bowl set aside.

  6. Deglaze your pot with the wine. 1/3 of cup should be enough!

  7. Add your chopped onions and garlic and sauté until fragrant.

  8. Add tomato paste, bay leaves and thyme and sauté for another 2 minutes or so. Make sure your onions are not burning!

  9. Add 2 cups of wine or 1 depending on the size of your pot.

  10. Add your crushed tomatoes and sugar.

  11. Mix and add your short ribs back.

  12. In separate bowl add 1-2 cups of water and 1/3 cup of tomato sauce. Mix well and pour it into the pot with your short ribs.

  13. Cook covered on the stove top at medium heat for 2 and half hours. Check in the short ribs regularly.

  14. Serve with creamy mashed potatoes.
