BLACK PEPPER CHICKEN GIZZARDS

Gizzards and any internal parts of a chicken are considered delicacies. Once peasant food, these delicate foods have become some of the worlds most sought after street foods, especially in Africa and Asia.

This recipe is a lovely yet simple one and is packed full of flavor. Gizzards can be eaten at any time of the day but I prefer to have mine for breakfast or as a midday snack.
INGREDIENTS
Chicken gizzards
Black pepper
Olive oil
Garlic
Onions
COOKING AND PREPARATION
Wash and thoroughly clean your gizzards and then pat down with a paper towel.
Season your clean gizzards with salt and pepper.
On medium heat, add oil to a pan and add your onions and garlic. Sauté until fragrant.
Add your gizzards to the same pan and fry until they turn dark.
Once your gizzards change color add water and fry for another 30 minutes or until they’re cooked through. Keep adding water if it finishes, this creates a lovely natural and velvety sauce/gravy.
Once cooked, remove from the stove and serve immediately.
