CHICKEN MUSHROOM & BACON PASTA

Who doesn’t love a creamy pasta dish! This pasta dish was literally made up of everything I had left in my fridge at the time. It’s so simple and yet full of so much flavor.

Ingredients
Chicken breasts
Bacon
Mushroom
Onions
Garlic
Cream
Parsley
Chicken spice
Black pepper
Mixed herbs
Butter
Spaghetti or Linguine
Some substitutes:
If you don’t eat pork for reasons known to you, you can substitute the bacon for Turkey bacon, chicken polony or macon.
I like to use fresh cream in my cooking but it’s not the only type of cream you can use for this dish. You can use milk and flour to make a basic white sauce which will be perfect for this dish. You can use dessert cream, evaporated milk, heavy cream and full cream.
For my non mushroom eaters you can substitute your mushrooms with Tofu, Eggplants or sun dried tomatoes.

Cooking instructions
Wash your chicken breasts and pat dry with a paper towel.
Add your pasta to boiling salt water and leave to cook. Check on it regularly.
Once clean, slice your breasts and add them to a bowl.
Chop up your onions and garlic and set aside.
If you’re using bacon that is not diced already, you need to slice/cut up your bacon at this stage and set aside in a bowl.
Season your chicken with all your spices including salt and pepper to taste.
Melt butter in a pan on high heat.
Once your butter is melted add your seasoned chicken and fry until slightly cooked then add your chopped onions and garlic. You can add more butter at this stage.
While your chicken is cooking slice your mushrooms.
When the onions are golden and translucent, add your mushroom into the pan.
At this stage your pasta should be cooked, drain the water but make sure you save 1/2 cup of pasta water for later.
Leave your chicken and mushrooms to cook for about 3-4 minutes or until your mushrooms are cooked through. Take off the stove once cooked!
In a separate dry pan add your bacon and fry off until crispy.
Time to construct
Season your cooked pasta with pepper and add one tablespoon of butter.
Add your chicken and bacon and mix well.
Leave to simmer on the stove on very low heat.
Whilst simmering, chop up some fresh parsley and toss into the pot.
Add your cream, the more cream you add the better. Mix and leave to simmer until the sauce thickens up.
Serve immediately!
