Wash your pork THOROUGHLY because you know, pork! Pat dry with a paper towel.
Season each side with salt and pepper. Place the pork onto your baking tray or pyrex.
Take 2 large cloves of garlic and chop them up into four. Place the garlic cloves on top of the pork and top it of the pork.
Finish off with some fresh thyme and olive oi.
Pop into the oven for about 45 minutes or until the pork is cooked through.
Try not to over cook the pork because it becomes super tough and unpleasant to eat!
Apple Sauce
Peel about 2 apples and chop them up into small cubes.
Season the apples with cinnamon and nutmeg. About 1tspn each.
In a saucepan on high heat melt some butter.
Once the butter melts add your apples and 2tbspns castor sugar.
Stir until apples start to turn golden brown.
Add some fresh cream and stir.
Then add some milk. Stir until apples are soft.
Add a pinch of salt to balance out the sweetness.
This combination goes well with creamy mashed potatoes.
