HAM & CHEESE EGG MUFFINS

Ingredients

  • Eggs

  • Milk

  • Salt

  • Pepper

  • Parsley

  • Mozzarella

  • Cheddar

  • Ham

  • Butter


Instructions

  • Preheat oven to 230•C.

  • Add butter to your muffin tray and a set aside.

  • In a medium bowl whisk together eggs, milk, salt, pepper and dried parsley.

  • Chop up your ham and cheese and add them to the egg mixture.

  • Pour your egg mixture about halfway into your muffin tray. This is to avoid spillage in the oven.

  • Bake for 20 minutes or until set.

  • To remove from tray, use a butter knife and run it through the sides until you can easily remove the egg muffin from the tray.

  • Serve immediately or refrigerate up to five days.

  • You can also freeze up to 3 months.
