HAM & CHEESE EGG MUFFINS

Ingredients
Eggs
Milk
Salt
Pepper
Parsley
Mozzarella
Cheddar
Ham
Butter
Instructions
Preheat oven to 230•C.
Add butter to your muffin tray and a set aside.
In a medium bowl whisk together eggs, milk, salt, pepper and dried parsley.
Chop up your ham and cheese and add them to the egg mixture.
Pour your egg mixture about halfway into your muffin tray. This is to avoid spillage in the oven.
Bake for 20 minutes or until set.
To remove from tray, use a butter knife and run it through the sides until you can easily remove the egg muffin from the tray.
Serve immediately or refrigerate up to five days.
You can also freeze up to 3 months.
