LEMON GARLIC CHICKEN & POTATO BAKE

You had me at chicken and potatoes. This is such a classic combination and if you ask me, one that can never let you down. This recipe is so easy to execute and is so delicious. Make this for your family or your weekend guests and trust me their tastebuds will be singing.


INGREDIENTS

  • Chicken pieces

  • Potatoes

  • Chicken stock powder

  • Chicken spice

  • Mixed herbs (dried)

  • Fresh Parsley

  • Butter

  • Lemon

  • Black pepper

  • Garlic


COOKING AND PREPARATION

  1. Season your chicken with salt, pepper, chicken spice and mixed herbs. Squeeze half a lemon over your chicken and leave to marinate for about an hour.

  2. Once your chicken is marinated, brown in a pan.

  3. Slice your potatoes into round pieces resembling the cut of potato chips/crisps.

  4. Add your potatoes to a greased oven safe pan. Season with black pepper.

  5. Sprinkle diced garlic and parsley.

  6. Place your chicken pieces on top of the potatoes and pour your mixed chicken stock as per package instructions.

  7. Your potatoes should be submerged so that they cook evenly and so that there’s a nice sauce once everything is cooked.

  8. Place in the oven and bake for 40 minutes or until the chicken and potatoes are cooked through.

  9. Serve immediately.
