MEDITERRANEAN CHICKEN AND POTATOES

What do you know about Mediterranean flavors? Garlic, olive oil, olives, feta, onions, coriander, cumin and so much more. The Mediterranean basin is home to the worlds most delicious dishes.


This chicken and potato dish is all the Mediterranean flavors you could have asked more and more.


INGREDIENTS

  • Thyme

  • Olive oil

  • Oregano

  • Garlic

  • Lemon

  • Chicken

  • Potatoes

  • Baby Plum Tomatoes

  • Olives

  • Butter

  • Rosemary

  • Parsley

  • Potatoes

  • Salt

  • Pepper

  • Potato spice


METHOD

  1. Preheat the oven to 200•C.

  2. I’m a bowl, Season your chicken with salt, pepper, thyme, oregano, rosemary, olive oil, garlic and lemon juice.

  3. On medium heat, add butter to your pan.

  4. Fry your chicken thighs skin side down for 3 minutes on each side or until brown. Set aside.

  5. Cut your potatoes in your desired shape and size. I prefer them in circles for this dish.

  6. Boil your potatoes for 10 minutes.

  7. Remove them from the stove and Season potatoes with potato spice.

  8. Place your potatoes on a large baking tray.

  9. Add your chicken on top of the potatoes.

  10. Add, olives, plum tomatoes and garlic. Top off with lemon wedges and a dash of lemon juice.

  11. Add butter and olive oil.

  12. Bake for 60 minutes or until the potatoes are cooked through
