NECTARINE COBBLER

Desserts are starting to grow on me. Here we have an easy cobbler recipe. Cobbler is a dessert that consists of either a fruity or savory filling that is layered between a batter of some kind.


One of the most common cobblers around is the Peach Cobbler. For this recipe I used Nectarines because I couldn’t get my hands on some peaches. They definitely worked perfectly for this recipe.

The flavors of this dessert are so good and addition of cinnamon gives it that warm feeling. It’s definitely one to try. See notes for more!



Ingredients

  • Nectarines

  • Sugar

  • Salt

  • Butter

  • All purpose Flour

  • Sugar

  • Baking powder

  • Milk

  • Cinnamon


The measurements listed below are just a guide and can be adjusted.


Measurements

  • 4 Tbsps butter

  • 1 cup all-purpose flour

  • 1/2 cup sugar

  • 2 tsps baking powder

  • 1/4 tsp salt

  • 1 cup milk

  • 1 Tbsp cinnamon


Instructions

  1. Preheat your oven to 190•C.

  2. Add butter to your baking dish and place it in the hot oven. Once melted, remove the pan from the oven.

  3. In a bowl mix your cinnamon, flour, sugar, baking powder, and salt. Set aside

  4. Add your milk 1/4 at a time, stir after each pour.

  5. Pour your batter into the pan with melted butter.

  6. Peel and slice your nectarines. Spread them over your melted butter and batter. Mix if need be.

  7. Bake at 190•C degrees for about 40 minutes.

  8. Serve warm, with a scoop of ice cream.

NOTES

  • Taste your nectarines before you add them to your batter. If they’re not as sweet as you like, that’s okay, you can always add them to a pot with about 1 Tbsp of sugar and bring to simmer to create a nice jam. Simmer for a few minutes, just until the sugar is melted and the nectarines start to sweat.

  • Other fruits you can use; peaches, plums, apples and pears.

  • You can substitute your fresh fruits for canned fruits. If you decide to use this method, make sure you drain the fruits.
