SMASHED POTATOES

Prep: Approx. 5-10 minutes

Cook Time: Approx. 30 minutes


Nothing better than a perfectly cooked potato. These smashed potatoes are so fluffy and creamy on the inside but crispy on the outside.

For me this is like mashed potatoes and wedges had a beautiful baby. These potatoes are different from the usual but they are worth it.


INGREDIENTS

  • Baby potatoes

  • Olive oil

  • Parsley

  • Black pepper

  • Salt

  • Garlic

  • Potato spice

  • Fresh dill

  • Butter


Cooking and Preparation

  1. In a pot, bring salted water to a boil.

  2. Wash your baby potatoes and toss them into the boiling water.

  3. Boil potatoes for at least 15-20 minutes or until tender. Don’t over boil the potatoes or leave them to because too soft.

  4. Remove the potatoes from the pot and transfer them to a bowl.

  5. Preheat oven to 200•C

  6. Season them with, potato spice, olive oil, parsley, and garlic. Toss until each potato is coated with seasoning.

  7. Transfer the potatoes to a roasting tray.

  8. Using a mug or a heavy base glassware, gently press on the potato in order to “smash it”.

  9. Once all the potatoes are smashed, season with black pepper.

  10. Add some unsalted butter and dill and roast for about 10 minutes or until the potatoes are crispy around the edges.
