SOFT CITRUS & HONEY GLAZED CHICKEN WINGS

Sticky wings are always a crowd favorite. These soft citrus wings scream summer and will have you and all your guests feeling like you’re on the beach having a great time, eating good food and sipping on some delicious cocktails.



INGREDIENTS

  • Chicken wings

  • Portuguese chicken spice

  • Black pepper

  • Italian herbs

  • Olive oil

  • Soft citrus fruit

  • Lemons

  • Honey

  • Tomato sauce

  • Chicken stock powder

  • Chutney


Guide and Substitutes

  • Soft citrus are easy peeling fruits and are often smaller than oranges. For these wings you can use different types of soft citrus, I used naartji citrus but you can use, clementines, mandarines or tangerines.

  • Using chicken broth cuts through the sweetness of the honey and pita well with the citrus flavor. You can use concentrated broth or you can mix you stock powder with water as per instructions.

  • Other than Portuguese chicken spice, you can use ordinary chicken spice for flavor.

  • Mixed herbs can be substituted in place of Italian herbs.


Measurements

  • 12 chicken wings

  • 3 soft citrus fruits (juiced)

  • Half a lemon (juiced)

  • 1 Tbsp Portuguese chicken spice

  • 1 Tbsp Italian herbs

  • 1/2 cup chicken stock powder mixed with water

  • 1/2 cup chutney

  • 1/2 cup tomato sauce

  • 1/4 cup honey

  • 1/2 tsp salt to taste



COOKING AND PREPARATION

  1. Preheat oven to 200•C

  2. Wash your chicken wings and pat dry with a paper towel.

  3. Season your chicken with all your spices, herbs and olive oil.

  4. Once your wings are seasoned well, place them on a backing tray of baking pan. Do not over crowd your pan, Make sure the wings spread out to ensure an even cook.

  5. Place in the oven and bake for 30 minutes or until they’re crispy and golden. Turn after 15 minutes.

  6. Remove from the oven and leave to cool in a bowl.

  7. While the wings are resting, make your sauce.

  8. In a bowl, mix the juice from your soft citrus, honey, lemon, tomato sauce, chicken broth and chutney. Taste and adjust flavors if you have to. The liquid may be a little runny but it will thicken up when frying.

  9. Pour your sauce over your wings and mix until all your wings are coated.

  10. Transfer the marinated wings to a frying pan and fry off until the sauce thickens.

  11. Remove from the stove and serve immediately!
