SUMMER CHICKEN & PASTA SALAD

A definite must try for your parties and gatherings. Or if you’re just feeling like having a salad.


INGREDIENTS

  • Chicken breasts

  • Pasta

  • Carrots

  • Cucumber

  • Pink lady apples

  • Green bell peppers

  • Baby plum tomatoes

  • Sweet yellow onions

  • Garlic cloves

  • Feta cheese

  • Chicken spice

  • Black pepper

  • Oregano

  • Greek salad dressing

  • Honey


NOTES

  • You can go all out and add extra ingredients to this recipe including:

    • Red onions

    • Sweet Red peppers

    • Sweet Yellow peppers

    • Hard boiled eggs

    • Olives

  • I love to make my own salad dressings but you can always opt for store bought. However to make your own salad dressing you’ll need the following ingredients;

    • 1 Fresh lemon (juice & zest)

    • 1/3 cup Olive oil

    • 2 Tbsp Honey

    • 1 tsp White vinegar

    • 1 tsp Dijon mustard



COOKING AND PREPARATION

  1. Season your chicken breasts with all your spices and bake with vegetable oil until cooked. About 15-20 minutes.

  2. Cook your pasta as per package instructions. Make your pasta is boiling in slightly salted water. It should only take about 15 minutes to cook.

  3. While your pasta is cooking chop up your vegetables (minus the carrots) and apples and set aside. Make sure you dice the vegetables into cubes.

  4. Sauté your onions and carrots slightly until soft.

  5. Using a grater, shred your carrots.

  6. Remove your pasta from the strove and leave to cook, do not drain all the water as it’s cooling.

  7. Once your chicken is cooked, remove from the oven and leave to rest for 3 minutes. Once rested chop up into medium sized cubes.

  8. Drain the remain water and start assembling your summer pasta salad.

  9. Finish off with feta, honey and your salad dressing.
