SWEET & SOUR CHICKEN & RICE

INGREDIENTS
Chicken breasts
White rice
Carrots
Leeks
Green peppers
Garlic
Green beans
Butter
Chicken stock powder
Beef stock powder
Brown sugar
Black pepper
Chicken spice
Mixed herbs
Onion powder
Chutney
Tomato purée
Lemons
No need for salt!
Substitutions:
You can substitute your leeks for onions. I prefer using leeks for this recipe because leeks have a sweeter and creamier texture and add a lot of flavor to the dish.
Instead of tomato purée, you can use crushed tomatoes or simply just grate whole tomato.

Cooking and Preparation
Wash your chicken breasts and pat dry with a paper towel.
Season your chicken breasts with chicken spice, pepper, mixed herbs and onion powder.
Add butter to an oven safe pan and sauté your vegetables on medium heat. To the same pan add your rice, 1 1/2 cups is enough for about 4-6 servings.
Mix the rice and vegetables until incorporated.
Preheat oven to 180•C
Remove your rice off the stove and add your seasoned chicken on top. Set aside.
In a bowl, add your mixed stock powder (mix according to instructions), tomato purée, chutney, brown sugar, black pepper and salt. Taste and adjust accordingly.
Pour your stock mixture over the chicken and rice. Make sure all the rice is submerged.
Squeeze half a lemon over the chicken and bake covered for 30 minutes.
If the liquid reduces and your rice is not fully cooked, mix water, tomato purée and 1 Tbsp of brown sugar and put over the dish.
Bake uncovered for another 20 minutes or until the rice is fully cooked.
Serve immediately.
