TOMATO & PRAWN PILAF

Pilaf is a rice dish that involves cooking using a broth or a stock, instead of plain water, to enhance your flavors. Other than stock, pilaf often has a protein and assorted vegetables added to it. These are often cooked at the same time and in the same pot or mixed towards the end of the cook and left to steam together in order to incorporate the flavors.


Pilaf can be made in several ways and with a variety of ingredients. Today we have an easy red prawn pilaf.



INGREDIENTS

  • Prawns

  • Onion

  • Garlic

  • White rice

  • Tomatoes

  • Chicken stock

  • Green beans

  • Salt

  • Pepper

  • Butter

  • Lemons

  • Parsley

  • Tomato paste

  • Paprika


These measurements are just a guide and can be adjusted.


MEASUREMENTS

RICE

  • 1 onion finely chopped

  • 4 garlic cloves, minced

  • 2½ cups rice

  • 4 cups chicken stock

  • Salt & pepper to taste

  • 2 tbsps butter

PRAWNS

  • 2 tbsp butter

  • 4 garlic cloves minced

  • 1 large tomato

  • 2 Tbsp tomato paste

  • 1/2 cup green beans



COOKING AND PREPARATION

  1. Heat butter in a large pot.

  2. Add the onion and garlic and fry until slightly brown.

  3. Add the rice.

  4. Stir for 2-3 minutes and then add your stock. Season with salt and pepper.

  5. Simmer for 15 minutes or until the rice is cooked.

  6. While waiting for your rice, add butter to your pan, once your butter has melted add your garlic and sauté until fragrant.

  7. Toss in your prawns and fry for about 5 minutes. Season with salt, pepper and paprika.

  8. Add your green beans, crushed tomatoes and tomato paste.

  9. Let your prawns sit in the sauce until it thickens.

  10. Transfer your rice to the pan or vice versa and keep on the stove on low heat for 2 minutes. Make sure everything is mixed well, the rice should turn a nice reddish brown color.

  11. Squeeze a lemon over and garnish with lemon wedges and parsley.
