VITUMBUWA (Fried Doughnuts)

Vitumbuwa, Zambian fried doughnuts. These are almost a staple in Zambia, every street corner you visit will have a bucket full of these golden delicious fluffy doughnuts.

These are perfect for a tea time snack or for breakfast. They are light and airy and will keep you going back for more. I can never just have one chitumbuwa at a time, it’s either 3 or nothing lol. Try them out and you’ll know what I’m on about.


You can make these doughnuts with yeast or with baking powder. This recipe uses baking powder which is the better rising agent for these in my opinion. Also using baking powder means you don’t have to wait an hour for the dough to rise as you would with yeast.


Ingredients

  • Flour

  • Sugar

  • Milk

  • Eggs

  • Baking powder

  • Vegetable oil


The measurements in this recipe are just a guide and can be adjusted.


Measurements

  • 2 cups flour

  • 1/4 cup sugar

  • 1 ½ cups /milk

  • 2 eggs

  • 2 tspn baking powder

Cooking and Preparation

  1. Mix all your dry ingredients in a medium sized bowl.

  2. Once your dry ingredients are in the bowl add your eggs and 1 cup of milk. Mix until incorporated.

  3. Add the remaining 1/2 cup of milk.

  4. Mix well and make sure all the bubbles and balls disappear.

  5. On high heat, heat about 2 cups of vegetable oil.

  6. To know if the oil is hot, use the end of a wooden spoon, if bubbles form then you know your oil is hot enough.

  7. Use a large spoon or ice cream scooper to place the batter into the hot oil.

  8. Deep fry until a nice golden brown.

  9. The batter may sink to the bottom but once it starts to cook it will rise.

  10. Once cooked, remove and place them in a bowl with paper towels and serviettes just so that the oil can be drained.

  11. Serve with a hot beverage of your choice.
