BAKED LEMON BUTTER POTATOES

Ingredients
Potatoes
Fresh Garlic
Unsalted butter
Fresh Parsley
Olive oil
Lemon
Chives
Salt
Black pepper
Preparation & Cooking
Thoroughly wash potatoes removing all buds and extra dirt.
Place potatoes in boiling salt water and boil until tender.
Once boiled, place the potatoes in cold water to prevent them from cooking.
Preheat oven to 150 •C.
While potatoes are cooling, chop some chives, garlic and parsley then mix together.
Slice a lemon and add lemon juice, lemon zest and olive oil.
Place potatoes in your preferred baking then add lemon and oil mixture.
Add garlic and herb mixture to the glossy potatoes and make sure each potato is covered with the mixture.
Finish off with a few slices of lemon and place a teaspoon of unsalted butter on top of each potato.
Season with salt and pepper before placing in the oven.
Cover with foil paper.
Place baking pan/tray in preheated oven and increase to 190 •C.
Bake potatoes for 15-20 minutes or until butter is melted.
Uncover potatoes and broil for another 15 minutes or until potatoes are golden and the skin is crispy.
Garnish with finely chopped parsley and serve with protein of choice.

Burnt butter sauce
Creamy garlic butter sauce
