CHEDDAR STUFFED MUSHROOMS

Ingredients
Large Shiitake Mushrooms
Cheddar cheese
Fresh coriander
Dried thyme
Dried sweet basil
Dried oregano
Black pepper
Salt
Olive oil
Preparation & Cooking
Wash mushrooms thoroughly removing all dirt.
Gently pat dry with a kitchen paper towel.
Preheat oven to 130•C
Add salt, pepper, thyme, sweet basil and oregano to a small mixing bowl.
Chop up the cheddar into medium sized pieces a put aside.
Place the mushrooms in your oven Pyrex or preferred oven tray and season with dried herb mix.
Lightly drizzle some olive oil to the mushrooms and the pyrex.
Once mushrooms are seasoned, add lots of cheese to each mushroom. Evenly distribute and top with fresh coriander.
Cover your mushrooms with foil and place the pyrex into your preheated oven. Increase the heat to 150•C and cook for 15 minutes.
Remove the foil and cook for another 5 minutes or until mushrooms are looking juicy and shrivelled down.
Garnish with fresh parsley or coriander.
Served well with bread or as a side.
NB: Mushrooms are delicate and if not handled well, can be fatal. Ensure the mushrooms are extremely FRESH and CLEAN! Bad mushrooms taste very bitter when cooked!
