CHICKEN & EXOTIC MUSHROOMS FETTUCCINI

Ingredients
Fettuccine
Chicken sausage
Hard Parmesan Cheese
Exotic mushroom
Italian Parsley
Salt
Black pepper
Olive oil
Lemon
Preparation & Cooking
Remove your sausage from the packet and squeeze all the sausage filling from the casing.
Heat a non-stick pan on high heat and add at least one tablespoon of olive oil.
Place the sausage meat in the pan and break with a wooden spoon and cook for about 8-10 minutes.
Once the sausage browns, remove from the pan and set aside.
Slice your mushrooms and add them to the same pan. Add a teaspoon of olive oil if you have to.
Season with salt and pepper and cook until golden brown.
Bring a pot of salted water to a boil and add your fettuccine pasta.
Cook pasta for 3-5 minutes and drain saving a cup of the pasta water. Do not rinse under cold water.
Add the sausage to the mushrooms and then add the pasta.
Squeeze half a lemon to the pasta and add the cup of pasta water.
Mix well over a low heat.
Finely chop some parsley and grate some Parmesan cheese. Add these to the pasta mix and toss until incorporated to the dish.
In a small mixing bowl, add some parsley, lemon juice, two tablespoons of olive oil, salt and pepper. Add this dressing once plated. Garnish with more cheese.
