SPAGHETTI & MEATBALLS

INGREDIENTS

  • Beef Mince

  • Onions

  • Carrots

  • 1 large egg

  • Spaghetti

  • Breadcrumbs

  • Red wine

  • Olive oil

  • Salt

  • Black Pepper

  • Fresh Parsley

  • Fresh Basil

  • Garlic

  • Tomatoes

  • Brown Sugar

  • Ketchup

  • Chutney

PREPARATION & COOKING

Homemade Beef Meatballs

  1. Take the mince out of the packet and remove excess blood or water.

  2. Place the mince in a large mixing bowl.

  3. Grate about 3 garlic cloves, fresh parsley and 1 large carrot and place in a small mixing bowl.

  4. Add salt, pepper and grated vegetables/herbs to the mince.

  5. Before mixing, crack 1 large egg and add your breadcrumbs. (See how to prepare homemade breadcrumbs below).

  6. Mix everything together and set aside for about 5 minutes.

Homemade Toasted Breadcrumbs

  1. Take 2 - 3 slices of bread. Toast the bread using a toaster, oven or dry pan.

  2. Toast until golden.

  3. Break the bread up into chunks and throw them into your food processor or blender. Or you could crush the bread with your hands in a medium bowl.

  4. And there you go, homemade breadcrumbs!

Homemade Pasta Sauce

  1. Peel two tomatoes and grate them into a medium mixing bowl.

  2. Add finely chopped parsley and basil.

  3. Add 1tbsp of Chutney, 2tbsp of Ketchup, 1tsp of Brown sugar and a pinch of salt and pepper.

  4. Mix together and place in the fridge to marinate.

Cooking

  1. Get your mince mix and start to form your meatballs.

  2. Take enough mince and roll with your hands until round and smooth. (Meatball size is up to you).

  3. Add 2tbsp of olive oil to your pan on high heat.

  4. Once the oil is hot enough add your meatballs and reduce the heat to a medium heat.

  5. Cook the meatballs for 2-3 minutes on each side.

  6. At this point place your spaghetti in a pot with boiling salt water and cook for about 10-15 minutes.

  7. Drain the pasta once it’s cooked and set aside. DO NOT RUN UNDER COLD WATER!

  8. Once the meatballs have browned on each side, remove them and add some diced onions to your pan. Add some red wine to deglaze the pan.

  9. Cook onions until golden and add your meatballs back to the pan, juices included.

  10. Cook for about 5 minutes and add your pasta sauce to the mix. Add more red wine.

  11. Let this simmer. If sauce reduces too much add some water.

  12. Once your meatballs are looking good add them to your pasta, mix and serve!
