CHICKEN MUSHROOM CASSEROLE

Ingredients
Chicken thighs
Large Portobello mushrooms
Garlic
Fresh parsley
Fresh cream
Chicken stock
Flour
Salt
Pepper
Olive oil
Measurements
1 cup of chicken stock
1 cup of flour
1 cup of fresh cream
Salt and pepper to taste
Cooking & Preparation
Preheat oven to 230•C
Season your flour with salt and pepper.
Fully coat your thighs in the seasoned flour.
On high heat, add olive oil to your pan.
Lightly sauté your chicken thighs in batches until a crust forms. Be sure to turn each side.
Transfer your chicken into a baking tray.
Slice your mushrooms and place them on top of chicken.
Finely chop your garlic and parsley and add to the dish.
Pour your fresh cream and chicken broth over your dish, cover with foil and place in the oven.
Remove foil after 20 minutes and cook for another 20 minutes, or until your chicken is cooked.
