SWEET POTATO SHEPHERDS PIE

A good shepherds pie goes a long way during winter. I used sweet potatoes for this recipe and it worked so well. That sweet and salty combination is always delicious.


knowing what type of sweet potato to use is key. I used the Hanna Sweet Potato. This potato has a Cream/White Skin and a lighter flesh that looks almost white before it’s cooked. It’s argued to be the most common type of sweet potato and it available throughout the year.

Hanna Sweet Potatoes are starchy and make a great mash, which is why I used it for this recipe. I also wanted to maintain that white creamy color and texture of a traditional shepherds pie made with Irish potatoes.



Ingredients

  • Hanna Sweet Potatoes

  • Beef mince

  • Green bell pepper

  • Carrots

  • Onions

  • Parsley

  • Salt

  • Pepper

  • Butter

  • Cream

  • Milk

  • Tomatoes

  • Tomato Ketchup

  • BBQ sauce

  • BBQ spice

  • Chicken spice

  • Garlic


Preparation & Cooking

Mash

  1. Peel & wash your sweet potatoes. Once peeled chop each potato into 4 smaller pieces.

  2. Boil the sweet potatoes in salt water until tender, then drain. The longer you boil the softer they are.

    1. You can opt for the bake option with the skin on. Bake at 200•C until potatoes are tender.

  3. Once drained, add 2tbsps of softened butter and 1tsp of black pepper.

  4. With a potato masher or simply with a fork, mash everything together removing all lumps. Add milk or cream to make sure the mash is smooth and creamy.

    1. You can use a hand whisk for that extra creamy texture

  5. Cover and Save for later.

Mince

  1. Take your mince out of the packet and remove all excess blood or water.

  2. On the stove, heat some olive oil in a pan on high heat.

  3. Once oil is hot, add your mince.

  4. To the mince, add beef spice, chicken spice, salt and pepper and stir occasionally.

  5. Dice some onions, peppers, garlic, parsley and carrots.

  6. Once the mince has browned add your onions and garlic.

  7. Cook until onion is golden and then add your other vegetables.

  8. Cook for about 10 minutes. Deglaze the pan with water.

  9. Chop one large tomato and add it to your mince. Add some tomato sauce and bbq sauce for extra flavor.

  10. Once the mince has cooked assemble your shepherds pie.

ASSEMBLING THE PIE

  1. In a suitable pyrex dish or baking china, add your cooked mince and spread making a clean layer.

  2. Then add your mashed sweet potatoes and gently spread covering the mince. Add cheese if you like.

  3. Place the dish in a preheated over at 180• and bake for 20 minutes or until the mash had developed a nice golden color on the top.

  4. Remove from the oven and garnish with fresh parsley.
