CHICKEN STIR FRY

Ingredients

  • Chicken breasts

  • Broccoli

  • Onion

  • Bell peppers

  • Cucumber

  • Carrots

  • Mushrooms

  • Soy sauce

  • Honey

  • Chicken stock/broth

  • Garlic

  • Salt

  • Olive oil

  • Black Pepper

  • Sesame seeds to garnish


Measurements

  • 1 cup chicken broth

  • 3 tbsp soy sauce

  • 1/4 cup honey

Cooking & Preparation

  1. Wash your chicken and slice into strips.

  2. Season your chicken with salt and pepper.

  3. On high heat, add 1 tablespoon of olive oil to your pan or wok.

  4. Once your oil is hot, add your chicken breasts and fry until slightly cooked. Remove from pan and set aside.

  5. Add onion and garlic and sauté until onion is lightly browned.

  6. Add the rest of your vegetables. Sauté for about 2-3 minutes.

  7. Add the chicken back to the pan and mix.

  8. Add mushrooms as well.

  9. Add soy sauce, honey and chicken broth.

  10. Bring to a boil, stirring occasionally, and let boil until your vegetables are cooked to your preference.

  11. Top off with some sesame seeds.

  12. Serve with coconut or jasmine rice.
