COTTAGE PIE

Ingredients

  • Potatoes

  • Beef mince

  • Assorted bell peppers

  • Carrots

  • Onions

  • Parsley

  • Salt

  • Pepper

  • Butter

  • Milk

  • Tomatoes

  • Ketchup

Preparation & Cooking

Mash Potatoes

  1. Peel & wash 6-8 large potatoes.

  2. Once peeled chop each potato into 4 smaller pieces. Boil the potatoes in salt water until tender, then drain.

  3. Once drained, add 2tbsps of softened butter and 1tsp of black pepper.

  4. With a potato masher or simply with a fork, mash everything together removing all lumps.

  5. Add milk or cream to make sure the mash is smooth and creamy.

  6. Save for later.

Mince

  1. Take your mince out of the packet and remove all excess blood or water.

  2. On the stove, heat some olive oil in a pan on high heat. Once oil is hot, add your mince.

  3. To the mince, add salt and pepper and stir occasionally.

  4. Dice some onions, assorted peppers, garlic, parsley and carrots.

  5. Once the mince has browned add your onions and garlic.

  6. Cook until onion is golden and then add your other vegetables.

  7. Cook for about 10 minutes. Deglaze the pan with water.

  8. Chop one large tomato and add it to your mince. Add some tomato sauce for extra flavor.

  9. Once the mince has cooked assemble your shepherds pie.

ASSEMBLING THE PIE

  1. In a suitable pyrex dish or baking china, add your cooked mince and spread making a clean layer. Then add your mashed potatoes and gently spread covering the mince.

  2. Place the dish in a preheated over at 180• and bake for 20-30 minutes or until the mash had developed a nice golden color on the top.

  3. Remove from the oven and garnish with fresh parsley.
