HASSELBACK POTATOES

Ingredients

  • Potatoes

  • Parsley

  • Olive oil

  • Lemon

  • Potato spice


Measurements

  • 4 medium potatoes

  • 4 tbsps olive oil

  • 2 tbsps potato spice

  • 1 teaspoon lemon zest

  • 2 tbsps lemon juice


Cooking & Preparation

  1. Preheat the oven to 220 •C

  2. Thoroughly wash your potatoes and remove all sprouts. If any.

  3. Line a baking pan with parchment paper/baking paper.

  4. Place a potatoes on a chopping board. Your potato should be in a horizontal position.

  5. Using a sharp knife, cut thin slices. You can place wooden spoons or chopsticks on each side of the potato to keep your knife from slicing through completely.

  6. In a small mixing bowl, add olive oil, lemon juice, lemon zest and potato spice. Mix.

  7. Brush your mixture over each potato.

  8. Season your potatoes with potato spice again. Not too much.

  9. Pop into the oven and bake for 20 minutes.

  10. Remove from the oven after 20 minutes and brush with the olive oil mixture. Use a knife or fork to separate the slices and get the mixture between the slices.

  11. Put the potatoes back in the oven for another 20 minutes Or until they’re crispy on the outside and soft in the middle.
