Carrots can be found in many colors, including yellow, white, orange, red, and purple.
Orange carrots, more common than most, get their vibrant orange color from beta carotene. Beta carotene is an antioxidant that your body converts into vitamin A.

Ingredients
Carrots
Honey
Salt
Dried parsley
Fresh thyme
Olive oil
Cooking & Preparation
Preheat oven to 230•C.
Wash your carrots thoroughly.
Peel and cut them into a shape and size of your choice. Make sure they’re the same size so they can cook evenly.
Season with olive oil, parsley and a pinch of salt to balance out the sweetness from the honey.
Drizzle some honey on top of your carrots. You can add as much or little as you please depending on the natural sweetness of the carrots. One or two tablespoon should be enough.
Top of with fresh thyme and pop into the oven.
Cook until tender.
Serve as a snack or as a side.
