LAMB SOUVLAKI

Souvlaki, is a popular Mediterranean dish from Greece. This street style food consists of small pieces of meat and sometimes vegetables grilled on a skewer.
The difference between this and a kebab is the fact that a traditional kebab is made with minced meat and souvlaki is made with meat pieces/chunks.

This recipe needs to be marinaded a few hours or a day in advance to let the meat soak up the flavors.
Ingredients
Lamb chunks
Olive oil
Oregano
Thyme
Lemons
Garlic
Honey
Coriander
Black pepper
Salt
Onions
Barbecue spice
Cooking and Preparation
Wash your lamb and cut it into medium sized cubes.
Season your lamb with your spices and herbs.
Add garlic and lemon zest.
In a separate bowl make your marinade by adding olive oil, lemon juice and honey. You can taste the marinade and adjust it if you have to. Add salt to balance out the sweetness.
Mix all the ingredients together. Cover with a plastic wrap and refrigerate for at least an hour. The longer you keep it in the fridge he more flavorful.
Pre heat your oven to 200•C.
Assemble your souvlaki by piercing each piece of lamb with your skewer. About 5-6 pieces of lamb per skewer should be enough depending on the size.
Pop them into the oven and roast for 20-30 minutes or until lamb is cooked through.
Serve with mint sauce or tzatziki sauce.
You can have this with a side of your choice.
