TZATZIKI SAUCE

Tzatziki, originating from the Ottoman Empire, is a dip or sauce popularly used in Mediterranean cuisine. It is often made with greek or plain yoghurt as it’s base. However, I discovered that Mabisi (Sour Milk) is a good substitute as well.
The yoghurt is usually mixed with cucumbers, garlic, salt, olive oil, vinegar or lemon juice, and different herbs such as dill or mint.
This is a ‘beforehand’ recipe so you are required to prepare a day or at least a few hours before your main course. This is so that the lemon juice or vinegar can “cook” the garlic and herbs with its acidity.
Ingredients
Cucumbers
Greek yoghurt
Salt
Garlic
Olive oil
Lemon
Black Pepper
Measurements
1 tsp salt
1 Tbsp lemon juice
1 tbsp Olive Oil
2 cups Greek yogurt
1 tsp black pepper
Cooking & Preparation
I’m a medium to small mixing bowl add your yoghurt.
Grate your cucumber and add it onto a cloth and squeeze, removing all juices.
Dice about one clove of garlic.
Add your olive oil, cucumber, garlic, lemon juice salt and pepper.
Mix well.
Cover with a plastic wrap and place in the fridge for a few hours or overnight.
Serve chilled.
Best served with: lamb, shawarma, pita, fish.
