LEMON AND HERB ROASTED POTATOES

This recipe uses baby potatoes. Why Baby potatoes? They are less in calories and are naturally fat free. This means they can be part of your low calorie diets.
The recipe requires you to keep the skin on. When cooked and eaten with the skin, they became an excellent source of fibre. Fiber is essential to maintain body weight and is good for digestion as well.

Ingredients
Baby potatoes
Lemons
Salt
Pepper
Thyme
Rosemary
Parsley
Butter
Olive oil
Garlic
Cooking & Preparation
Wash your potatoes thoroughly and remove all impurities.
Bring your potatoes to a boil in salt water until they are slightly cooked.
While your potatoes are boiling, mix lemon juice, garlic, thyme, rosemary, parsley, melted butter and olive oil in a separate bowl. Don’t add too much lemon, about 1/4 cup or 3 Tbsps will do.
Remove your potatoes and transfer them to your roasting tray without the water.
Pour your lemon and herb sauce over your potatoes.
Roast your potatoes until they’re cooked through. Soft on the inside and crispy on the outside.
