ONE PAN CHICKEN & POTATO ROAST

Ingredients

  • Chicken thighs

  • Potatoes

  • Carrots

  • Onion

  • Garlic

  • Thyme

  • Salt

  • Pepper

  • Louisiana

  • Cajun

  • Olive oil

Cooking & Preparation

POTATOES

  1. Preheat oven at 250•C

  2. Wash your potatoes and remove all sprouts or extra dirt.

  3. Cut your potatoes in half and turn those halves into three smaller cubes.

  4. Place your potatoes in a ceramic pan.

  5. Add onions, these should be sliced in round circles.

  6. Peel your carrots and chop them up in large sections. Place them onto your tray.

  7. Finely chop three cloves of garlic and add to the dish.

  8. Season with salt and black pepper. Mix everything well and make sure each potato is seasoned fully.

CHICKEN THIGHS

  1. Wash your things and remove all excess fat. Pat dry with a paper towel.

  2. Season with salt, pepper and Louisiana Cajun spice.

  3. Grate some garlic and lemon zest to the chicken.

  4. Mix everything together and place into the ceramic tray with the potatoes.

  5. Add some freshly squeezed lemon juice and top it off with some fresh thyme.

  6. Let it roast for about an hour and a half or when your food is your desired doneness.
