SPINACH & FETA STUFFED CHICKEN THIGHS

Ingredients

  • Deboned Chicken thighs

  • Feta cheese

  • Spinach

  • Salt

  • Pepper

  • Olive oil

  • Butter

  • Garlic

  • Onions

  • Lemons


Cooking & Preparation

  1. Wash your chicken and remove any excess fat. Set aside.

  2. Heat butter in a pan. Once butter has melted add onions and garlic.

  3. Sauté onions and garlic until golden.

  4. Add your spinach and sauté until slightly cooked. Remove from the stove and set aside.

  5. Season your chicken thighs individually on the inner side. Season with salt and pepper.

  6. Once your chicken is seasoned, add the spinach on the inner side of your chicken and top off with feta cheese.

  7. Roll or bring the ends of the chicken thighs together. Use a tooth pick to keep the stuffing intact.

  8. Lightly grease your baking tray with olive oil and add your chicken.

  9. Finish off with more feta cheese and black pepper.

  10. Halfway through the cook, squeeze lemon juice over your chicken.

  11. Once the chicken is cooked, remove and serve immediately.

  • Note

  1. If you are using chicken thighs that have the skin. Simply stuff your feta and spinach in the skin pocket.
