STUFFED CHICKEN BREAST WITH SPINACH & CREAM CHEESE

Ingredients

  • Chicken breasts

  • Sour cream

  • Cream cheese

  • Salt

  • Black Pepper

  • Dried parsley

  • Garlic

  • Onion

  • Chicken spice

  • Portuguese chicken spice

  • Butter

  • Fresh thyme

  • Olive oil


Measurements

  • 1 tspn Portuguese chicken spice

  • 1/4 tspn salt

  • 1 tbsp Black pepper

  • 1 tspn chicken spice

  • 1/4 cup cream cheese

  • 2 tbsps sour cream

  • 1 large garlic clove (minced)

  • 1/2 an onion (diced)


Instructions

SPINACH FILLING

  1. Preheat oven to 230 degrees.

  2. On high heat, melt butter in a pan.

  3. Once butter has melted, add your garlic and onion. Sauté until your onions are a light golden color.

  4. Add your spinach to the pan and sauté until slightly wilted. They’ll continue to cook in the oven.


CHICKEN

  1. Wash your chicken and remove extra fat.

  2. Season with salt, pepper, chicken spice and Portuguese chicken spice.

  3. Use a sharp knife to make an incision on the side of each chicken breast.

  4. In a mixing bowl add cream cheese, sour cream and your cooked spinach. Mix well.

  5. Using a spoon, stuff your chicken breasts with your cream cheese and spinach mixture.

  6. Use toothpicks to seal the stuffing. This is so that the stuffing does not ooze out once in the oven.

  7. Place the chicken breasts in a greased baking dish.

  8. Garnish with fresh thyme and dried parsley.

  9. Bake for about 25-30 minutes or until chicken is cooked through.

  10. Remove the toothpicks after cooking.
