CHICKEN GYROS

A gyro, pronounced ‘yee-ro’, is a Greek dish made from meat cooked on a vertical rotisserie very similar to a shawarma.
This recipe doesn’t require a rotisserie, you simply just need to grill your chicken in the oven.

Ingredients
Chicken thighs
Greek yogurt
Oregano
Coriander
Garlic
Chicken spice
Black pepper
Sugar
Salt
Olive oil
Lemons
Thyme
Onions
Olives
Plum tomatoes
Cooking & Preparation
Preheat oven to 200•C.
Marinate the chicken with yogurt, thyme, coriander, chicken spice, oregano, lemon zest, lemon juice, salt and pepper.
Cover and refrigerate upto 8 hours.
Place on a baking tray and bake for 35 minutes, flipping once halfway through.
While your chicken is cooking sauté onions and your plum tomatoes.
Once cooked, cut the chicken into strips.
To assemble the gyro; take your homemade pita bread, spread your Tzatziki, add tomato, onion, chicken and top it off with olives and feta.
