CREAM OF MUSHROOM SOUP

Ingredients

  • White Button Mushrooms

  • Garlic

  • Thyme

  • Parsley

  • Butter

  • Salt

  • Pepper

  • Fresh cream

  • Milk

  • Flour

Cooking & Preparation

  1. Wash your mushrooms thoroughly, removing all dirt and impurities. You’ll need about 8 mushrooms. You can add more if you like.

  2. Finely slice the mushrooms, each mushroom should give you about 5-6 slices.

  3. Mince 2 cloves of garlic and set aside.

  4. Heat 1tbsp of butter in a medium sized pot and let the butter start to sizzle.

  5. Once the butter has sizzled up, add your mushrooms and your garlic.

  6. Sauté the mushrooms and garlic for a minute then add your salt, pepper, thyme and parsley.

  7. Cook for about 5 minutes, stir regularly.

  8. Once the water has disappeared add 1tspn of flour to the mushrooms and mix well, making sure there are no lumps.

  9. Now add your fresh cream. About 500ml will do the trick. Add a splash of milk. Not too much.

  10. Mix and leave to simmer and thicken.

  11. Once the soup is at your desired consistency or thinkness you can go ahead and serve.
